And we aren’t just saying that because we grow them.

GOAT CHEESE AND PISTACHIO CROSTINI WITH FIG JAM

Pistachios take this simple and elegant appetizer to the next level. Recipe featured at Expo West.

Ingredients

  • 1 baguette sliced into (24) 1/2” slices
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • 8 ounces goat cheese
  • 2 tablespoons whole milk
  • 1 teaspoon honey
  • 8 ounces fig jam (any jam will work)
  • 4 ounces chopped Touchstone pistachios, roasted salted

Directions

Preheat oven to 350F.

In a small bowl combine goat cheese, milk, and honey using a spoon or whisk to combine until smooth.

Using a lightly greased sheet tray, lay out the sliced baguette pieces and drizzle with olive oil or butter. Evenly sprinkle salt over the top.

Bake for 5-7 minutes until slightly browned around the edges.

Remove sheet tray from oven and spoon goat cheese mixture evenly over the top of the baguette slices.

Using a small spoon, place a dollop of fig jam over the top followed by a sprinkle of Touchstone pistachios.

Optional:  Garnish with torn basil, tarragon, or fresh thyme.

Chef Brandon tip:  Place goat cheese on counter one hour before starting recipe to help the goat cheese soften.  ENJOY 🙂
